My kids are pretty good eaters but my oldest is by far the pickiest. She has a penchant for cheese fries and anything white. Yes, the anti-health coach diet is her preferred diet.
So, when she asks for something healthy, I jump on it. She loves a strawberry banana smoothie, as most kids do, but as this isn’t the best smoothie around, I figured I’d try to sneak some extras in there. The other day I threw in a little flax seed (ground very small) and kale. Then held my breath while she tried it.
Obviously she noticed the kale right away but I convinced her to try it anyway and if the taste worked, ignore the green specks. She did and it did. I was partially thrilled with my success but knew the real test would be if she asked for it again.
After helping me sort our produce for this week’s Purple Dragon Coop pick up, she was clearly inspired by all the fresh from the farm fruits and veggies. Guess what this morning’s breakfast request was? Yup, take two of our new favorite smoothie!

Strawberry Banana Smoothie with A Twist ( Serves 3)
- 2 Bananas
- 6-10 strawberries
- 1 Tablespoon ground flax seed ( I use my coffee bean grinder)
- Small bunch of Lacinato kale 4-6 leaves. ( I find Lacinato a bit sweeter but regular kale will work too.)
- Blend in a blender with water and ice to your desired consistency.
