My obsession with Trader Joe’s** is well documented. Now that the store has re-entered our lives I am rediscovering all of it’s perks. Funny though, we have substantially changed the way we eat around here since I last shopped regularly at TJ’s so some of my old “go-to” items are no longer appealing.
One thing remains: they have a fresh salsa that is to die for. It’s zero WW points and you recognize every ingredient on the list. I’d give you a shelf life but seriously, we eat it so fast I have no idea how long it might last. I could literally eat it with a spoon. Sometimes I do actually. Mostly, on good days, I use it for other things. So, for all you “I can’t have more than two items” chefs, here’s a list you’ll love.
- Smash an avocado in a bowl. Add 3-4 heaping table spoons of salsa and you’ve got Guacamole. Use chips for dipping or if you make it as much as I do, substitute peppers for healthy dipping.

I could even use the salsa in the slow cooker meal I'm making for tonight! (Tex Mex Slow Cooker Chicken – Mark's favorite and SOOOO EASY!!)

Actually I was just thinking about the avacado/salsa mix. Was going to ask you if there is a specific salsa you use or just any of the TJ's brands.
