I have lost about six pounds since January first. My journey is less than consistent. I have probably had more fast food in the last three weeks than I had in the six months prior. I need help figuring out what to do when the day gets crazy. Maybe I need help keeping the day from getting crazy!
The problem is not the menu planning-as you know I kicked butt at that. The problem is the grocery shopping. That gets pushed to the bottom of the list and so I never seem to have everything I need for my recipes. What has resulted though is some creative new recipes that have been quite good!
I’ll share some but I warn you I am not great at measurements. I tend to cook to taste. So I’ll give you a vague idea, but if you need details you might need to search a little harder. If, like me you use recipes as a jumping off point, then you’ll probably enjoy the starter ideas here. Either way, let me know what you come up with.
Mexican Salad: (This recipe originated in a WW Cookbook and started at 5 points. I doctored it a little so it may not be quite 5 anymore)
Ground Beef (a package which is usually around a pound)
2t Chili Powder, 1tCumin, 1/2t Cinnamon, 1/2t salt
romaine lettuce shredded (about 2 heads)
2 tomatoes sliced
1 can black beans drained
3-4 scallions thinly sliced
1/2 red onion (optional-I can’t get enough)
1 Avocado sliced
(some) salsa (see what I mean-not big on measurements-it’s roughly a cup)
1/2 C low fat sour cream
lime juice-to taste
Cook the beef in a frying pan until no longer pink, mix in the spices then simmer until the sweet smell gets ya.;)
Layer the lettuce, tomatoes, scallions, onions, avocado and beans in a bowl
Top with beef and salsa
Mix sour cream and lime juice in a bowl. Pour on top of salad.
Serve immediately.
Even my kids ate this-amazing.
