I am leaving today to take the in-laws (almost all-we’ll miss you Aunt Bean!) to a West Virginia University (no, not University of WV-get it right people) football game. More specifically, we are taking them to a WVU game tailgate. We actually don’t have tickets to the game as of yet.
Yesterday I rolled up my sleeves and rolled out the dough for pepperoni rolls.
As a student, tailgating pretty much entails either being invited to a fraternity date party where there is champagne and cheap beer, or shotgunning a few drinks in your room then venturing out, bags o’ liquor taped under your clothes, to a place called “the pit” to see where you can score free food and drink.
I’ve only tailgated a few times as an adult and they all involved my college roommate and her Morgantown family. Saturday mornings at their house were a flurry of baking and trunk packing and good natured teasing of all kinds. There were generations gathered and it was glorious.
The recipes that have stuck with me are pepperoni rolls and hamburger cookies. They are fun, delicious and easy to transport in the back of your car. I have no idea if they are tradition for all WVUers, but they are for me.
So, I figured it was only fitting that I make them for this weekend.
Imagine how delighted I was when The Girl wanted to help. We had a ball rolling biscuit dough and sneaking pepperonis and bits of cheese.

I imagined how fun this might be, years from now, when we are in my huge (future) kitchen having mimosas and rolling dough-just us two alumnae. Now I just have to start singing the Kappa Lovely Girl song to her at night and the indoctrination will be complete.
I hope somewhere Connie Schmidt knows she passed her tailgating legacy on to a surrogate daughter and that I can make her proud.
Let’s Go Mountaineers.
