Clearly last night I was still in summer mode because despite my carefully planned menu, I had no desire to prepare dinner. So, I went off plan and threw together one of my best “clean out the refrigerator” meals in a while. It looked like this:
I had a leftover rotisserie chicken from the night before that I picked clean. I threw it in a pan with:
- can of black beans
- a can of Old El Paso Green Enchilada Sauce
Then I served it over:
- white rice with a sprinkle of cheddar/jack cheese on top
The Husband raved about it. I can’t wait to eat leftovers for lunch. The hardest part was clean up. The longest part of prep was boiling the rice.
Dare I say, anyone can make this meal? Enjoy!
