With a new job and full-time school, my life has gotten a bit insane of late. I literally feel like the Energizer Bunny-just spinning in circles all day and never stopping. As you might guess, feeding my brood has become a bit of a challenge.
Throughout my healthy eating tenure, I have mostly forbidden prepared, frozen meals. They are all just too full of sodium at best and all sorts of other unrecognizable crap at worst. There is usually something fresh I can whip up as fast as any six minute microwave or skillet meal.
Except chicken nuggets. Try as I might with the millions of homemade chicken nugget recipes out there, I can never seem to replicate that crispy texture and taste that kids love. Thankfully, we have a Trader Joes that sells me the closest thing to real chicken chicken nuggets out there. Until now.
When kidfresh contacted me to try their new Super Duper Chicken Nuggets, I jumped at the chance. You see, kidfresh is the only brand of frozen foods I’ve ever trusted. On very rare occasions I’ve been known to use their frozen mac-n-cheese or quesadillas because the kids like them, they’re surprisingly healthy as they’re made of all real ingredients, and they take about 2 minutes to prepare. Though we don’t eat their stuff often, I know it’s a brand I can trust and I was excited to check out their nugget offering.
I was worried at first, because though my kids are used to the taste of chicken that is raised humanely and without antibiotics, like kidfresh nugget-chickens are, the breading is whole grain (11g), they have 40% less sodium than other brands and the chicken is also mixed with some hidden cauliflower. So, while I was pretty excited about the state of these nuggets, I was also pretty sure my kids would hate them. They’re pretty open to eating new things (After years of “training”!) but when something is supposed to taste like “junk food” like typically fat-fried chicken-like nuggets, they can sniff out a healthy imposter a mile away.
Imagine my joy then when not one, not two, but all three gave these nuggets the thumbs up. They even thought they must be “junkier” than Trader Joes. When I fessed up and told them not only whole grain but hidden cauliflower, they nearly fainted. (They’re a bit dramatic. Have I mentioned that?)
The littlest dude even made up a song and dance.
Needless to say, we’ll be adding kidfresh chicken nuggets to our busy-soccer-weeknight rotation. Once again, kidfresh makes everyone happy! I love an empty plate.
Kidfresh products are available at Whole Foods and ShopRite, locally. They’re making their way to more and more grocery stores so ask your manager for some. I was given a sample of kidfresh nuggets to try. All opinions are my own (and my satisfied kids.)
